Hamburger Steak with Creamy Onion Gravy


Ingredients

For the Patties:
3 tablespoons of cooking oil (canola, vegetable)
1-1/2 pounds of 80/20 ground chuck
3/4 cup of onion, finely chopped
1 large egg
1 teaspoon Tiger Sauce, or hot pepper sauce, or to taste, optional
1 teaspoon of seasoned salt
1/2 teaspoon garlic powder
1/4 to 1/2 teaspoons freshly cracked black pepper
About 1/3 cup of all purpose flour, for dipping the patties
For the Gravy:
1 large onion, halved and sliced (about 3 cups sliced)
1 cup of beef broth
1 cup of water
1/4 cup of all purpose flour
1/4 teaspoon of seasoned salt, or to taste
1/4 teaspoon of freshly ground black pepper, or to taste
1/2 tablespoon of Worcestershire sauce, optional
1 teaspoon of browning & seasoning sauce (like Kitchen Bouquet), optional
2 cups of sliced mushrooms, optional

Instructions


Heat the cooking oil over medium high in a large heavy-bottomed stainless skillet. In a medium sized bowl, gently combine the ground chuck, chopped onion, egg, hot sauce, seasoned salt, garlic powder and pepper. Shape into 4 to 6 equal sized patties. Dip each patty into the flour and cook until browned on both sides; remove and set those aside.
Add the sliced onions to the skillet and cook over medium heat until lightly caramelized, stirring regularly. Whisk together the beef broth, water, 1/4 cup of flour, seasoned salt, pepper, and the Worcestershire and Kitchen Bouquet, if using, until well combined. Pour into the skillet with the onions and stir constantly, until mixture begins to thicken.
Return the hamburger steaks to the skillet, turn to coat, add sliced mushrooms if using, and reduce heat to simmer. Cook, covered, for about 20 minutes longer. Serve with mashed potatoes and some green beans, or a mixed garden salad on the side.
Cook’s Notes: The brown gravy for these is pretty good all on its own since its reliant on the pan drippings, but if you have it, just that little bit of Worcestershire and Kitchen Bouquet adds a bit more depth and is delicious. If you find that you need a binder, add in a small amount of fresh bread crumbs to the ground beef. If using pre-made hamburger steak patties, omit the onion, egg and hot sauce, and sprinkle both sides of the patties with the seasoned salt, garlic powder and pepper, pressing in the seasoning a bit. Then dip each patty in the flour and proceed with the remaining recipe.
Note: Tiger Sauce is a type of sweet and sour hot sauce found in the condiment shelf of your store. Regular hot sauce can be substituted, or simply omit.

Ingredients
2 ripe mashed bananas
2 eggs
1½ c. sugar
½ c. canola oil
¼ c. plus 2 T. Buttermilk
1 tsp. vanilla
1¾ c. flour
1 tsp. baking soda
½ tsp. kosher salt
Cream Cheese Filling
8 ounces cream cheese, room temp
⅓ c. sugar
1 egg
1 T. Flour

Instructions
Grease 10 inch loaf pan well.
Bread
Beat bananas, eggs and sugar.
Add oil, buttermilk and vanilla till smooth.
Add all dry ingredients.
Spread half in the pan. Top with cream cheese filling and then spread rest of this batter on top. Bake 350 for 1 hour and 10 mins.
Cool 10 mins in pan and then invert onto a rack to cool completely.
Filling
Electric mix all ingredients until smooth.

AMERICAN GOULASH



2 lbs lean ground beef
1 medium onion
1 medium green pepper
1 32 oz can tomato juice
2 cups elbow macaroni
1 16 oz can diced tomatoes
1/4 cup Parmesan cheese


Brown ground beef until done. Meanwhile, dice onion and green pepper. Add onions, green pepper, tomatoes, tomato juice, and macaroni. Salt and pepper to taste.
Cook on medium low heat for 45 minutes. Serve with a sprinkling of Parmesan

mix ingredients except sauce. Roll meat into 6 small loaves, then mix in each person’s favorite sauces individually. Bake for 45 min then top with melted cheese.

Patty Melts With Secret Sauce



1½ pounds ground beef
2 teaspoons Worcestershire sauce
1 teaspoon kosher salt
½ teaspoon ground black pepper
12 slices sourdough bread
½ cup Secret Sauce
3 medium Vidalia onions, thinly sliced
6 slices Cheddar cheese
8 tablespoons unsalted butter

Secret Sauce
¼ cup Dijon mustard
¼ cup mayonnaise
1 tablespoon barbecue sauce
½ teaspoon hot sauce
In a small bowl, stir together mustard, mayonnaise, barbecue sauce, and hot sauce. Store, covered, in refrigerator up to 3 days.
In a large bowl, combine ground beef, Worcestershire, salt, and pepper. Shape ground beef into 6 oval patties.
In a medium cast-iron skillet, melt 2 tablespoons butter over medium heat. Add onion. Cook, stirring occasionally, until onion is soft and golden brown, approximately 35 minutes.
In a large cast-iron skillet, cook patties over medium-high heat until browned and cooked through, approximately 2 minutes per side. Remove skillet from heat. Remove patties from skillet; wipe out skillet.
Layer 1 bread slice with 1 tablespoon Secret Sauce, 2 to 3 tablespoons caramelized onions, 1 slice cheese, 1 patty, and another 1 tablespoon Secret Sauce. Top with another bread slice. Repeat with remaining bread, Secret Sauce, caramelized onions, cheese, and patties.
Heat skillet over medium-high heat. Melt 2 tablespoons butter in skillet. Working in batches, cook sandwiches, flipping once, until golden brown and heated through, approximately 3 minutes per side. Add remaining butter to skillet as needed.

Cheesy Spinach Pinwheels



Ingredients:
1 sheet of frozen puff pastry, defrosted (such as Pepperidge Farms)
2 teaspoons olive oil
2 garlic cloves, minced
6 ounces fresh spinach, chopped or torn into pieces
Sat & pepper, to taste
1 ½ ounces Parmesan cheese, freshly & finely grated (I shred mine on the smallest holed side of a box grater)
1 ounce crumbled Feta cheese

Directions:
On a clean, dry surface sprinkle a small amount of flour to prevent sticking and lay down your sheet of defrosted puff pastry. Using a rolling pin, roll the pastry into a 10”x14” rectangle of even thickness.
In a large skillet or saute pan, bring the olive oil to medium heat. Add the garlic and allow garlic to cook for about a minute. Add the spinach and stir together. Allow the spinach to cook for 2-3 minutes, stirring occasionally until wilted. Add a couple shakes of your salt & pepper shakers (or to taste). Spread the spinach evenly across the surface of the rolled out puff pastry sheet. Sprinkle the Parmesan and Feta cheeses evenly over top of the spinach, covering the entire surface of the pastry.
With the longer side of the pastry rectangle facing you, roll the pastry by pushing forward, wrapping the ingredients into a long roll. Once the pastry is completely rolled up into a big “log,” wrap it in parchment paper or cling wrap and place it in the freezer for 30-40 minutes. This will make it easier to cut into circles.
Preheat the oven to 400 degrees. Line a large baking sheet with parchment paper and set aside.
When you take the pastry roll out of the freezer, use a serrated knife to slice it into 24 even “spirals.” I find the easiest way to do this evenly is to cut the roll in half, then each of those pieces into quarters, then cut each of those pieces into thirds. Place each spiral onto the parchment lined baking sheet and bake them in the oven for 20 minutes or until lightly golden. Serve warm.

Pizza Chicken




Ingredients
1 egg, beaten
1 cup part skim ricotta cheese
1/2 cup sliced pepperoni, cut in half
1/2 cup parmesan cheese, grated or shaved, divided
1 teaspoon minced garlic
2 tablespoons fresh Italian parsley, chopped, divided
1/2 teaspoon salt
Fresh ground pepper, to taste
3 thick or 6 thin boneless, skinless chicken breasts
1 cup prepared marinara sauce
1/2 cup mozzarella cheese, shredded
Pasta of choice, prepared according to package directions

Instructions
Preheat oven to 350 degrees. Coat a 13″ x 9″ pan with cooking spray.
If using thick chicken breasts, slice into each breast at it’s thickest point and continue the cut all the way through, creating two evenly sized rectangular pieces. Repeat with remaining pieces of chicken. Set aside.
In a medium bowl combine egg, ricotta, 1/4 cup grated or shaved Parmesan, garlic, pepperoni, salt, pepper to taste, and 1 tablespoon chopped Italian parsley. Mix well.
Place about 2 tablespoons of the ricotta filling on the short end of a chicken breast. Gently roll the chicken over the filling and place it, seam side down, in the prepared pan. Repeat with remaining chicken breasts. Pour the marinara sauce evenly over each piece of stuffed chicken. Top with mozzarella, 1/4 cup Parmesan, and remaining 1 tablespoon of chopped Italian parsley.
Cover pan with foil and bake for 35 minutes. Remove foil and bake another 10 minutes or until no pink remains when you cut into chicken. Remove from oven.
Serve with pasta on the side.

Simply Sour Cream Chicken Enchiladas


Serves: 8

1 lb chicken breast, diced
1 medium onion, chopped
1 tablespoon vegetable oil
8 (8 inch) flour tortillas, softened
1 1⁄2 cups grated monterey jack cheese or 1 1⁄2 cups Mexican blend cheese, divided
1⁄4 cup butter
1⁄4 cup flour
1 (15 ounce) can chicken broth
1 cup sour cream
1 (4 ounce) canchopped green chilies


DIRECTIONS
In frypan, cook chicken and onion together in oil over medium-high heat until chicken is just done.
Divide cooked chicken evenly between 8 tortillas; add 1 1/2 tablespoons cheese to each tortilla.
Roll enchiladas and place seam-side down in 9×13″ baking dish that has been lightly sprayed with no-stick cooking spray.
Melt butter in a medium saucepan; stir in flour to make a roux; stir and cook until bubbly; gradually whisk in chicken broth then bring to boiling, stirring frequently.
Remove from heat; stir in sour cream and green chiles; pour sauce evenly over enchiladas.
Top with remaining 3/4 cup cheese (baking dish may be double-wrapped and frozen at this point) and bake at 400F for 20 minutes until cheese is melted and sauce near edges of baking dish is bubbly.

Meatball Sub on a Stick



Ingredients:

1 lb lean ground turkey
1/2 cup whole wheat bread crumbs
1/2 cup grated Parmesan cheese
1 Tbsp dried Oregano
1 Tbsp dried Basil
1 Tbsp dried Parsley or 1/4 cup fresh chopped
1/2 tsp Crushed Red Pepper
2 cloves garlic, minced
1 can Pillsbury Original breadsticks
1 cup shredded mozzarella cheese
12 (10″-12″) wooden skewers
Marinara sauce for dipping

Instructions:


Preheat oven to 375°
Line 2 baking sheets with parchment paper. Set aside.
In bowl combine ground turkey, bread crumbs, Parmesan cheese, Oregano, Basil, Parsley, red pepper flakes and garlic. Form into 1 inch meatballs.
Open can of breadsticks and starting with one breadstick at a time thread dough then meatball. Repeat the process with 2 more meatballs alternating dough-meatball, ending with dough. Make sure to spread dough and meatballs away from each other by about 1/4″, so the meatballs bake through and the dough has room to expand.
Bake for 20 minutes until the meatballs are cooked through. Remove from oven and sprinkle each skewer with 1-2 Tbsp of shredded mozzarella cheese. Place back in oven for 2-3 minutes until cheese is melted.
Serve immediately with warm marinara sauce for dipping.

Banana Cream Cheesecake



Ingredients
20 nilla wafers
¼ cup butter, melted
24 oz cream cheese, softened
2/3 cup sugar
2 Tbsp cornstarch
3 eggs
¾ cup mashed bananas (about 2)
½ cup whipping cream
2 tsp vanilla extract

How to make it :
Preheat oven to 350°F.
Place wafers in a blender or in a food process. Blend until finely crushed.
Add melted butter and blend well. Press crumb mixture onto bottom of 10″ pan and place in refrigerator.
In a large bowl, beat cream cheese with electric mixer at medium speed until creamy. Add sugar and cornstarch. beat until blended. Add eggs, one at a time, beating well after each addition. Beat in bananas, whipping cream, and vanilla.
Pour cream cheese mixture into prepared pan. Place pan on cookie sheet and bake 15 minutes.
Reduce oven temperature to 200°F continue baking 75 minutes
Cool completely on wire rack before removing rim of pan. Refrigerate cheesecake, uncovered, 6 hours or overnight.
Allow cheesecake to stand at room temperature 15 minutes before serving.

FRIED APPLE or PEACH PIES



Ingredients


8 ounces dried apples or dried peaches
1 cup water
1/3 cup sugar
1 tablespoon butter
1 tsp. cinnamon or apple pie spice
1 can jumbo refrigerated flaky biscuits
vegetable oil, for frying

Directions


Combine apples and water in saucepan; bring to a boil. Cover, reduce heat, and simmer for 30 minutes or until tender. Remove from heat and let cool, mashing slightly if pieces are large. Stir in sugar and butter; set mixture aside.
If using fresh apples: For the filling: Add 2 TBS butter to a large saute pan and melt. Add 4 peeled, cored and chopped apples, sugar, cinnamon, and 1 tsp lemon juice and cook over medium heat until the apples are soft, about 15 minutes. Remove from the heat, mash slightly and cool.)
Roll each biscuit into a 5-inch circle on a lightly floured surface. Place about 1 tablespoon apple mixture on half of each biscuit circle. To seal pies, dip fingers in water and moisten edges of circles. Fold in half, making sure edges are even. Using a fork dipped in flour, press edges firmly together to seal.
Pour oil to a depth of 1/2 inch into a heavy skillet, or use deep fryer. Fry pies in hot oil (370°) over medium-high heat until golden, turning once. Don’t rush it because you want to make sure the biscuit is cooked completely through.
Drain well on paper towels.
Makes 10 pies.

1 can Eagle brand condensed milk ( 14 oz )
1 1/2 bags of chocolate chips ( 11.5 oz bags is what I use) any flavor you wish
1 cup chopped walnuts ( optional )
Toss all ingredients in to a mircowave bowl, melt till creamy pour into a 8×8 baking dish, cool for 2 hours cut and serve.

2 INGREDIENT CRISPY OVEN BAKED BBQ CHICKEN



Ingredients

8-10 chicken thighs and/or drumsticks (bone-in, skin on)

2 cups of your favorite barbecue sauce

olive oil, salt, and pepper


Preheat oven to 400 degrees F.
Coat the chicken on all sides with olive oil and season with salt and pepper.
Place the chicken skin side down on a rimmed baking sheet. Bake for 25 minutes.
Remove chicken from oven and turn the temperature of the oven up to 425 degrees.
Coat the top of the chicken with barbecue sauce using a basting brush. Use a spatula to flip the chicken over, being careful not to tear the skin. Baste the other side of the chicken, and place back in the oven for 7 minutes.
Remove from oven, baste top with barbecue sauce, and place back in oven for 7 more minutes.
Remove from the oven again and baste again, and place back in oven for 7 more minutes or until chicken is crispy, parts are blackened, and it's fully cooked.

Old Fashioned Banana Pudding




Ingredients:
1 cup sugar
1/2 cup all-purpose flour 
1/2 teaspoon salt 
2 cups milk (NOT skim)
4 or 5 ripe bananas, sliced thin (cover with plastic wrap or sprinkle with lemon juice to keep them from turning brown)
1 box vanilla wafers
1 teaspoon Vanilla extract 
1 tablespoon Butter (not margarine)
4 Egg yolks (Large eggs or better)

Meringue:

4 egg whites, room temperature
5 tablespoons sugar
1/4 teaspoon cream of tartar
1/2 teaspoon vanilla extract


Directions:


Preheat oven to 375°F. Line the bottom of a 9x9-inch pan with a layer of vanilla wafers.

Combine sugar, flour and salt in a bowl, and mix well. Set aside.

In a heavy saucepan, beat the egg yolks well. Over medium heat, add the flour mixture to the egg yolks, alternately with the milk and vanilla, stirring constantly. Bring to a gentle boil and, when the mixture begins to thicken, add the butter, continuing to stir. Keep boiling and stirring until mixture reaches a nice pudding consistency. Make sure you don't scorch the pudding. Remove from heat.

Place a layer of banana slices on top of the vanilla wafers. Pour half of the pudding over the banana layer. Put down another layer of vanilla wafers, another layer of banana slices, and cover with the remaining pudding.

Beat the egg whites at high speed until they form soft peaks. Add the cream of tartar. At high speed, gradually add the sugar, a tablespoon at a time, and beat until stiff peaks form. Fold the vanilla into the meringue, and spread the meringue over the pudding, sealing it at the sides of the dish.

Bake until meringue browns, 12 to 15 minutes.

Crockpot Mississippi Roast






1. Buy a chuck roast.
2. Put it in the crock pot.
3. Sprinkle Hidden Valley ranch dressing on top.
4. Sprinkle McCormick Au Jus mix on top.



Put a stick of butter on top.
Put about 5 pepperoncini peppers on top.
(You buy them in a jar.)

Do NOT add water.
.
Cook in crock pot on low for about 8 hours.

Crock Pot Coca Cola Roast




1 beef roast of choice (use the size roast and the amount of vegetables you need to feed your family. I used a 2.5 pound Chuck Roast)
1 can Cream of Mushroom soup
1 package dry onion soup mix
1 (12 oz) can Coke
Red potatoes, halved
Carrots, cut in chunks

PREPARATION:
Place beef in crock pot and top with dry onion soup mix.
Place vegetables around roast.
Mix together the cream of mushroom soup and the Coke in a bowl and pour over roast.
Set crock pot on low, cook for 6-8 hours. The longer you cook, the more tender the meat becomes.
